Description

Recolte Noire is made entirely from Pinot Noir with a minimum of two years aging in the bottle and with a dosage around 5g/L. While most growers would put a Blanc de Noirs at the end of a tasting of their Champagnes, Davy puts it near the start as Pinot on Kimmeridgian soils is delicate, filigreed, and mineral. The Recolte Noire certainly has all those characteristics and a toastiness and elegance of fruit that resembles fresh raspberry or strawberry. Davy states that the refined fruitiness in his wines is from fermenting the base wine in used Puligny-Montrachet barrels, which makes sense as he learned his trade in Burgundy.

Champagne

Champagne, located in northeastern France, is famous for its sparkling wines made primarily from Chardonnay, Pinot Noir, and Pinot Meunier. The region’s cool climate and chalky soils contribute to the high acidity and minerality of its wines. The unique production method, known as Méthode Champenoise, involves a secondary fermentation in the bottle, creating its signature bubbles. This labor-intensive process, combined with the region’s strict regulations, leads to the quality and consistency of Champagne. The wines range from bone-dry to sweet, with flavors of green apple, citrus, and brioche. Champagne’s versatility makes it perfect for celebrations and food pairings, from oysters to fried chicken.
