Aromas of fresh citrus and pear on the nose lead to a palate of tangy lemon and lime with a subtle minerality. This wine is vibrant and focused with hints of spice and sea salt on the finish. It contains 100% Sauvignon Blanc from 35+ year old vines grown on a steep, southeast facing slope. It is made with indigenous yeast and is fermented and aged in 60% stainless steel, 40% old 600L barrels for 18 months.
