Nuits-Saint-Georges has a reputation for robust wines with coarse tannins, but there are plenty of exceptions to the rule. Take Pierre Boillot's Les Pruliers, which is quite the opposite, floral, finessed, and delicately detailed, thanks to vines that are more than a century old, planted in 1911. In its youth, budding aromatics of Rosé and black cherry stand out, but over time, it will mature into a woodsy, truffled beauty with a long, mineral finish.
